It's hard to get Greens in the Winter
Greens are so good for you and so hard to find in the winter, I mean, if you're trying to eat local stuff that actually still has some nutritional value to it. I usually blanche and freeze spinach for dishes in the winter and that helps to get those Winter greens. This year, I am trying something new. I blended Kale and Chard with some water and froze it in ice cube trays. I am figuring, come January, when our bodies are desperate for anything green and fresh-ish, I can pop a cube into a smoothie and voila: green nutrition!! It might even taste good!
